How does a guitar or bass get that vintage look on its paint?

I have been playing for around ten years, bass and guitar. I'm impressed though, some vintage models of guitars and basses are missing paint in some spots how does that get to happen?
Examples: "Jaco" Pastorius' bass, Stings'
Guitars "used to" be finished with Nitrocellulose Lacquer which was moresusceptible to heat/cold/moisture/dry air, etc than newer instruments are. it still happens to newer instruments but the process can take a little longer.

Vintage Bass Guitar Shops?

I'm looking for a vintage (or something made at least before 1995) Fender Precision Bass. I've looked on eBay, but that stuff is way too expensive and there's no way to know if it's quality or original. Does anybody know of a great vintage shop online
